Easy Blueberry Breakfast Cookies

These grab and go Blueberry Breakfast Cookies use ingredients that are probably already in your cupboards. Ready in just 20 minuets, they’re easy, quick and delicious. make sure to add them into your busy morning routine. Lets get baking!

Key ingredients

Ripe Bananas– You’re going to want to make sure your bananas are ripe. If they are staring to oxidize and turn brown, that’s even better. The brown parts of a banana have the most sugars, ensuring you’re getting the full concentration of banana flavour. If your banana is under ripe, you wont get the proper soft texture and richness we’re looking for.

Maple Syrup– This is going to be the main sweetener in the recipe (if you’re not going to add the icing). We love using maple syrup because it’s a softer way of adding sugar. It’s also a great way to add extra moisture to the cookies.

Tips on nailing

Mix your dough properly– You want to make sure all of the spices, oats and berries are evenly distributed and hydrated. This is going to give you an even bite throughout all of your cookies!

Keep your balls even- A great tip is to use a cookie scoop that will give you even weights every time. A kitchen scale is also a great tool to have. If you don’t have either of those, just eye ball it and try to stay consistent.

An even press goes a long way– Once your balls are evenly portioned, make sure they are evenly pressed. This is going to make sure they all bake at the same rate. A thicker cookies might mean it’s undercooked and a thinner cookie might overcook.

Top it off with a little more sweetness

If you’re looking to add a touch more sweetness to the blueberry breakfast cookies, we like to add a drizzle of icing. This is super simple and only uses two ingredients:

Icing sugar and heavy cream or milk.

Combine 2 tbs of icing sugar with 1 1/2 tsp of heavy cream or milk. Mix until thick and creamy and drizzle away!

Blueberry Breakfast Cookies

Cook Time 20 minutes

Ingredients:  

For the cookies

  • 2 Large Ripe bananas Mashed
  • 1/2 cup Peanut butter
  • 1 tsp Cinnamon
  • 1/2 tsp Salt
  • 1 tbs Maple syrup
  • 2 1/4 cup Rolled oats
  • 1/2 cup Blueberries

For the Icing

  • 2 tbs Icing sugar
  • 1 1/2 tsp Heavy cream or milk

Instructions: 

  • Preheat oven to 350F.
  • With your hands or a fork, mash your ripe bananas into a chunky paste. Combine all other ingredients and mix until fully combines.
  • Place golf ball sized dough balls onto a baking pan and then press down gently with a spatula to flatten.
  • Place in oven for 13 minutes.
  • Remove from oven and allow to cool on tray for 10 minutes.
  • Optional: Make a simple sugar icing by combining icing sugar and either milk or cream. Drizzle over cookies.
