Shredded Chicken Tacos

Ingredients:  

For the Tacos

  • 12 tortillas
  • 8 tbsp oil
  • 4-5 cups cooked rotisserie chicken meat (the meat from 1 small rotisserie chicken)
  • 1 tsp chili powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 cups grated cheese (Monterey Jack, cheddar, gouda, or mozzarella)

For the Pineapple Salsa

  • 1 1/2 cups pineapple, diced small
  • 1/2 cup onion, diced
  • 1 jalapeño, seeded and diced small
  • juice of 1 lime (1–2 Tbsp)
  • 1/2 cup fresh cilantro
  • 1/2 tsp salt

For the Avocado Crema

  • 1 avocado
  • 1/2 cup sour cream
  • 1/2 cup fresh cilantro
  • juice of 1 lime
  • 1/2 tsp chili powder
  • 1/4 tsp salt

Instructions: 

  • In a small bowl, mix together the pineapple, onion, jalapeño, cilantro, lime juice, and salt.
  • Set aside and refrigerate until ready to serve.
  • In a food processor, blend the avocado, sour cream, cilantro, lime juice, chili powder, and salt until smooth. Set aside.
  • In a small bowl, mix the warm rotisserie chicken with the chili powder, onion powder, oregano, cumin, salt, and pepper.
  • Stir until the chicken is evenly coated.
  • Heat 2 Tbsp oil in a medium pan or skillet.
  • Place 3 tortillas in the oil, then add a small handful of cheese and some seasoned chicken to each.
  • Let them sear, then fold over and flip to crisp both sides.
  • Repeat with the remaining tortillas, adding more oil as needed.
  • Keep the tacos warm on a sheet pan in the oven set to its lowest temperature.
  • Once cooked, carefully peel the tacos open and spoon in the pineapple salsa.

I want to make the Shredded Chicken Tacos ahead of time for a Family dinner.
If I prep and place on a oven tray and then just reheat in an oven covered in alfoil will that work?

Absolutely, Laura! Assemble the tacos ahead, place them on a baking tray, cover with foil, and reheat in a 350°F oven for about 10–15 minutes. They’ll warm through nicely and still taste amazing. Just leave the salsa and crema off until serving.
