Ingredients:  

  • 10 cup watermelon, diced
  • 3 limes, juiced & zested
  • 1/4 cup maple syrup honey or agave syrup work too
  • 1 jalapeno, thinly sliced
  • 1 cup light feta cheese, crumbled
  • 1/2 cup cilantro, chopped
  • 2 tsp tajin or sriracha spice

Instructions: 

  • In a large bowl, add the lime juice, lime zest, and maple syrup. Give it a good stir to combine.
  • Add in the cubed watermelon, sliced jalapeño, crumbled feta, chopped cilantro, and your spice of choice (Tajin or sriracha).
  • Gently toss everything together until the salad is well mixed. Serve immediately, or chill for a bit if you're prepping ahead.
