This recipe came to me when I wanted to make something that was giving “chicken soup,” but still had those southern flavours and heat that you find in a Buffalo dip. Oh, and I wanted it to be hearty like a stew. What came out of the pot was so delicious I knew I had to share it. It’s a Buffalo Chicken Chili Recipe, it’s a White Bean Chili… it takes a little bit from several dishes we love. This white bean chicken chili is a one-pot winner. It’s easy, quick, and full of flavour thanks to a few smart ingredient choices and a base that comes together fast in a large pot or Dutch oven. Whether you’re using rotisserie chicken or cooking up your own chicken breasts or thighs, this recipe guarantees a creamy, comforting bowl every single time.

White Bean Chicken Chili

Ingredients:  

  • 4 cups cooked chicken, ideally the meat off a small rotisserie chicken
  • 3 tbsp oil
  • 1 large onion, (1 1/2 cup for each single onion) diced
  • 2 large celery stalks (about 1 cup per stalk) cut into ribs
  • 2 carrots (about 1 1/2 cups per 2 carrots) chopped
  • 4 tbsp fresh parsley chopped
  • 1/2 tsp smoked paprika
  • 1/2 tsp cayenne
  • 1/2 tsp chilli powder
  • 8 cups vegetable or chicken broth
  • 1 red pepper diced
  • 8 oz cream cheese
  • 1 can corn, drained and rinsed (1 can is roughly 341 ml)
  • 1 can white beans, drained and rinsed (1 can is roughly 500 ml)

Garnish

  • sour cream
  • green onion
  • Louisiana hot sauce

Instructions: 

  • In a large pot over low heat, cook the onion and carrot until the onions are translucent. Add the celery, spices, and broth. Increase the heat to medium and cook for 10–15 minutes.
  • Once the celery is soft, add the cream cheese and mix until well incorporated, using a whisk if needed.
  • Stir in the red pepper, white beans, corn, chicken, and parsley. Cook for another 10 minutes.
  • To serve, top each bowl with Louisiana hot sauce, sour cream, and green onion or cilantro.

Building the Flavour Base for White Bean Chicken Chili

Chili is such a comforting dish, and layering in those classic chicken soup flavors in really makes this feel like it deserves that spot in my fall and winter soup rotation. Sautéing onion, carrot, and celery in a bit of olive oil are the aromatic foundation of a classic chicken soup. To make the chili like I did, cook those ingredients low and slow until the onion turns translucent, then stir in the spices. A half teaspoon of smoked paprika, cayenne pepper, and chilli powder work together to give the chili depth and warmth, and turn this from “chicken soup” to “hearty chili”. The smell alone at this stage will have everyone wandering into the kitchen to see what’s cooking.

Next comes the broth. Use whatever you have and like, or even a combination of chicken broth and chicken stock. Once added, the mixture simmers over medium heat until the vegetables soften. This simmering stage isn’t just to cook the vegetables though. It’s to allow spices to bloom, the onions to sweeten, and the whole pot starts to come together.

Creamy White Bean Chili Comfort: When to Add Cream Cheese

When you’re making a hot dish, sometimes the idea of adding dairy can be intimidating. Is it going to curdle? Or burn? Practice makes perfect, but with this white chicken chili, when to add cream cheese is already sorted. Melting the cream cheese so that you have smooth, velvety texture without lumps is pretty straight forward. Add the cream cheese once the vegetables have softened and the broth is hot but not boiling. Stir it around the pot, it’ll melt slowly! Whisk it in slowly until it’s fully melted and combined. This step transforms your soup into that creamy, dreamy chili texture everyone loves.

If you prefer a slightly lighter finish, you can swap half of the cream cheese for a dollop of sour cream or even a spoonful of Greek yoghurt. Just be sure to stir gently to maintain that silky consistency.

The Star Players of a White Bean Chili recipe: Beans, Chicken, and Corn

Once the base is ready, it’s time to bring in the bulk of what makes this feel like chili, white beans, chicken, and corn. For this white bean chicken chili, I used canned white beans, which make the process so much quicker. Great Northern beans or cannellini beans both work beautifully here, and you can even mix them if that’s what you’ve got on hand.

Canned corn adds sweetness and a bit of crunch to balance the creamy broth. Stir everything together along with the diced red pepper and chopped parsley for a burst of colour and freshness.

As for the chicken, using a rotisserie chicken is the ultimate time-saver. Pull the meat right off the bone and stir it into your chili—it adds loads of flavour and keeps the dish easy and fuss-free. If you’re not using a rotisserie, eight chicken thighs or a few chicken breasts work well too. Just make sure they’re cooked before adding them to the pot, I suggest cooking them in the same pot before you do anything else, and setting them aside for this moment.

How to Make Your Chili Thicker

If your white bean chicken chili isn’t as thick as you’d like, don’t worry—it’s easy to fix. Let the soup simmer uncovered for a few extra minutes to reduce the liquid slightly. You can also mash a few of the beans against the side of the pot to release their starches, which naturally thickens the mixture.

Another option is to stir in an extra ounce or two of cream cheese or even a spoonful of cornmeal for a heartier texture. Keep in mind that this chili will continue to thicken as it cools and becomes even creamier the next day—making it one of those “better tomorrow” recipes you’ll look forward to reheating. Since this is a buffalo chicken chili recipe, i don’t think it can get too thick… because you can always use it as a dip if that seems to happen.

Tips + Tricks from the Kitchen

This dish is all about flexibility and ease, but here are a few tips to make it even better:

  • Add toppings at the table: Sour cream, avocado slices, and tortilla chips make great garnishes. A splash of Louisiana hot sauce or a sprinkle of fresh cilantro takes it over the top.
  • Make ahead magic: Like many chilis, this one gets even better the next day. Store it in the fridge in an airtight container—it’ll stay good for up to four days.
  • Spice control: Adjust the cayenne pepper to suit your taste. You can always add more heat later, but it’s hard to take it away once it’s in.

A Twist on Buffalo Chicken Chili

If you like the Buffalo Chicken vibe this chili is giving, I think you could ramp this up and lean more into that Buffalo Chicken Chili recipe and swap a bit of the chicken broth for a few tablespoons of your favourite Buffalo sauce and add an extra pinch of cayenne. It’s a fun, fiery spin that still keeps that creamy comfort you love from the white bean chili.

This variation works especially well with rotisserie chicken, as the sauce clings beautifully to the shredded meat. Serve it with tortilla chips or a drizzle of ranch dressing if you want to lean into those classic Buffalo flavours. Really, this should be called
