Chipotle Black Bean Burger

Ingredients:  

Black Bean Burgers

  • 1 can black beans, drained and rinsed
  • 2 cloves garlic, minced
  • 1 chipotle pepper, chopped + 1 tbsp adobo sauce from can
  • 2 tbsp chopped red onion
  • ¼ cup diced red pepper or shredded carrot
  • zest of 1 lime
  • 1 tbsp garlic powder
  • ½ tbsp chilli powder
  • 1 tbsp smoked paprika
  • 1 egg
  • ½ cup chopped cilantro
  • ¼ cup sliced green onions
  • 2 tbsp rice flour (any flour works)

Chipotle Mayo

  • 1 cup store bought mayo
  • 2 canned chipotle peppers, diced
  • 1/2 juice & zest of a lime
  • ½ cup chopped cilantro
  • 1/4 cup fresh basil
  • 1 clove garlic, minced
  • 1 pinch salt

Add ons

  • 4 burger buns
  • sliced tomatoes
  • sliced red onions
  • boston lettuce

Instructions: 

  • Add the black beans into a bowl and mash with a fork. Don’t over mash them into a paste — leaving some whole black beans adds amazing texture.
  • Add in the garlic, onion, red pepper, lime zest, garlic powder, chilli powder, smoked paprika, egg, cilantro, green onions, and rice flour.
  • Mix until combined and form into burger patties.
  • Use a ring mold if you want perfectly shaped burgers.
  • Place the patties in the refrigerator for 10 minutes.
  • While the burgers chill, make the chipotle mayo.
  • In a bowl, combine the mayo, chipotle peppers, lime juice, cilantro, basil, garlic, and salt. Stir until smooth and set aside.
  • Heat a lightly oiled skillet or pan over medium-high heat.
  • Cook the burgers for 6–7 minutes per side until browned and crispy.
  • Toast the buns if desired, then build the burgers with lettuce, tomatoes, red onions, and a generous amount of chipotle mayo.

The chipotle peppers and adobo sauce are the stars here though. Smoky, spicy, rich, and slightly sweet, they completely transform the burger mixture.

And then there’s the chipotle mayo.

This burger recipe can easily be adapted to being Vegan friendly. Just substitute the egg with one tablespoon of ground flaxseed and mix with one tablespoon of warm water. Let it rest for 10 minutes. Give it one final stir and then add. Thank you for this healthy and delicious recipe!

Hey Andy, these chipotle burgers and the chipotle mayo are to die for, thank you. Three notes: the size of the can of beans was not included, so I used 540 ml. Also used pinto beans. The burgers needed a pinch of salt. After I cooked them, I sautéed some peppers, mushrooms, onion, and garlic. I rolled the burger with the veggies and the mayo fried them ima bit of oil and made burritos. Delicious! Thank you.
