Black Bean and Corn Salad With Chickpeas and Feta
When fresh corn season rolls around, I want to put it in everything. Grill it, char it, toss it into salads—this is the time of year to take full advantage of it. And this black bean and corn salad is exactly the kind of recipe I want on the table when the weather is hot.
It’s creamy without being heavy, smoky from the charred corn, tangy from plenty of lime juice, slightly spicy from jalapeño, and packed with crunchy vegetables, black beans, chickpeas, cilantro, and salty feta or cotija cheese.
The whole thing comes together in about 25 minutes and makes an awesome side for a summer BBQ, but it’s substantial enough that I’m very happy eating a big bowl for lunch. And on those nights when turning on the oven feels absolutely ridiculous? This corn and black bean salad is the move.
One important tip before we get going: dice everything relatively small. You want every scoop to get a little corn, bean, pepper, onion, cheese, and dressing. That’s when this salad really works.

Ingredients:
- 1 can black beans, drained and rinsed
- 1 can chickpeas, drained and rinsed
- 1 red bell pepper, finely diced
- 1 jalapeño, finely diced
- 1/2 small red onion, finely diced
- 2 cloves garlic
- 1/2 cup chopped cilantro
- 1/2 cup crumbled cotija or feta cheese
- 5 ears fresh corn, husks removed
- 1 tbsp olive oil
For the Dressing
- 1/3 cup plain Greek yogurt
- 1/4 cup mayonnaise
- zest and juice of limes
- 1 garlic clove, finely grated
- 2 tsp chili powder or tajin
- 1/2 tsp kosher salt
Why This Black Bean Corn Salad Works
For me, a great summer salad needs contrast.
This black bean corn salad has a little bit of everything going on.
The black beans and chickpeas make it substantial. Red bell pepper and red onion bring crunch. Jalapeño adds heat. Cilantro makes everything taste fresh, while feta or cotija gives you those little salty bites throughout.
Then there’s the corn.
Charring the corn kernels gives this salad a completely different personality. Fresh corn is already naturally sweet, but getting some serious colour onto it adds smoke and depth that plays beautifully with the creamy lime dressing.
It’s basically summer in a bowl.

Get Some Serious Char on That Corn
Don’t be shy here.
I want the corn to look properly charred—not gently warmed.
Rub each cob with a little olive oil, then put it onto a ripping-hot grill or cast-iron pan. Give it 8–10 minutes, turning occasionally, until you’ve got deep brown and black spots around the outside.
That char is doing real work in this corn and bean salad. It balances the sweetness of the corn and gives the whole dish that smoky flavor we’re after.
Let the corn cool slightly before slicing it from the cob. If you try to tackle screaming-hot corn with a knife, you’re making life harder than it needs to be.
And if you’re buying piles of corn while it’s fresh, don’t stop with salad. A cozy corn chowder is another fantastic way to take advantage of corn season.

The Creamy Dressing For This Black Bean and Corn Salad
This dressing is intentionally lighter than something made entirely with mayonnaise.
I’m combining Greek yogurt and mayo because you get the best of both worlds: the mayo provides richness while the yogurt adds tang and keeps things fresh.
Then we bring in lime zest, fresh lime juice, grated garlic, chili powder or Tajin, and kosher salt.
That’s it.
You could certainly see cumin in similar Mexican-inspired dressings, but I don’t think we need it here. Between the chili powder, charred corn, garlic, cilantro, and lime, there’s already loads of flavor.
Whisk the dressing separately before adding it to the salad. That way, the spices and lime are evenly distributed instead of having little pockets of seasoning throughout the bowl.

Black Beans AND Chickpeas
Yes, we’re using both.
A traditional black bean and corn salad might stop at black beans, but adding chickpeas gives this version more texture and makes it much more satisfying as a meal.
The key is draining and rinsing both really well.
You don’t want any of that canned liquid diluting the dressing or making the finished salad watery. Give the beans a good rinse, drain them thoroughly, and they’re ready to go.
With the corn, beans, cheese, and creamy dressing, this is the kind of salad that can easily stand on its own for lunch.

Tips & Tricks For This Black Bean and Corn Salad
Keep those veggies small. This might be my biggest tip for the entire recipe. Finely dice the jalapeño, bell pepper, and onion so every forkful has a little bit of everything.
Don’t skip the char. Colour equals flavor. Get that pan or grill properly hot before adding the corn.
Taste before serving. Corn varies in sweetness, limes vary in acidity, and cheese varies in saltiness. Once everything is mixed, take a bite and decide whether you need another squeeze of lime or pinch of salt.
Give it 15 minutes. If you’ve got the time, let the finished salad sit before serving. It gives the ingredients a chance to get acquainted and allows the dressing to work its way into everything.
Easy Substitutions and Additions
This salad is incredibly flexible, especially if you’re trying to use up vegetables.
Feta and cotija are both excellent, so use whichever you can find. Cotija gives it a more traditional Mexican-inspired flavor, while feta brings that familiar salty, creamy bite.
If you don’t like cilantro, you can leave it out rather than replacing it with something completely different.
You could also add diced avocado right before serving for extra creaminess. I would add it at the last minute so it doesn’t get mashed while you’re tossing everything together.
And while tomatoes aren’t part of this particular ingredient list, they’re a common addition to black bean and corn salads if you’re looking for another variation down the road.

What to Serve With Black Bean and Corn Salad
This is an absolute backyard BBQ recipe.
Serve it alongside grilled chicken, steak, burgers, sausages, fish, or tacos. It’s especially useful when you’ve got rich grilled meats because the lime and fresh vegetables cut through all that richness.
You can also scoop it up with tortilla chips and turn it into something halfway between a salad and a dip—which, frankly, is a very good place to be.
For lunch, I don’t think it needs much else. The beans and chickpeas give it enough substance to make a proper meal.
Can You Make It Ahead?
Absolutely.
You can prepare the vegetables, grill the corn, and make the dressing ahead of time. Keep everything refrigerated, then toss it together before serving.
The finished salad also keeps well in the fridge, although the vegetables will gradually soften as they sit.
If you’re making it specifically for a BBQ or gathering, I’d assemble it a few hours ahead rather than the night before. That gives the flavors time to mingle while keeping plenty of crunch and texture.

Can I make black bean and corn salad with frozen corn?
You can, but during corn season I’d absolutely choose fresh corn. Charring fresh corn directly on the cob gives you fantastic sweetness, smoke, and texture.
Is corn and black bean salad served warm or cold?
Either works, but I like this version cool or at room temperature. Let the grilled corn cool slightly before assembling everything, then give the salad 15–20 minutes to sit before serving.
Can I add avocado?
Absolutely. Dice the avocado and gently fold it through just before serving so it keeps its shape.

This black bean and corn salad checks every box for me when summer hits. It’s fresh and crunchy, but it’s also creamy and satisfying. You’ve got sweetness from the corn, smoke from the grill, tang from lime, a little heat from jalapeño, and salty cheese pulling the whole thing together.

This salad is so good. My husband said the dressing smelled amazing when he walked into the kitchen (I used two zested and juiced limes), and I agree the dressing is what makes this salad so great. I only had two ears of corn so added some chopped cucumber to round it out, then topped with grilled chicken for a complete lunch. Will be making this regularly!
