Recipe

Cabbage Roll Soup
Ingredients:
- 1 tbs olive oil
- 1 white onion, diced
- 3 cloves garlic, minced
- 1 lb lean ground beef
- 4 cups green cabbage, chopped
- 1/2 cup long grain rice
- 3 cups tomato sauce
- 4 cups beef broth
- 1 cup water
- 2 tsp salt
- 1 tbs oregano
- 1 tsp chilli flakes
- 1/2 tsp cinnamon
- 1 tbs brown sugar (optional)
- 2 tsp soy sauce
Instructions:
- Heat 1 tablespoon of olive oil in a large pot over medium heat.
- Add 1 diced white onion and 3 minced garlic cloves to the pot. Sauté until the onion becomes soft and translucent, about 3-4 minutes.
- Add 1 pound of lean ground beef to the pot. Cook, stirring occasionally, for about 2 minutes or until the beef begins to brown.
- Add 4 cups of chopped cabbage and ½ cup of long grain rice to the pot. Stir to combine
- Pour in 3 cups of tomato sauce, 4 cups of beef broth, and 1 cup of water. Stir well.
- Season the soup with 2 teaspoons of salt, 1 tablespoon of oregano, 1 teaspoon of chili flakes, ½ teaspoon of cinnamon, 1 tablespoon of brown sugar (optional), and 2 teaspoons of soy sauce. Stir well to combine.
- Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 20-23 minutes, or until the cabbage and rice are tender
- Taste the soup and adjust seasoning if necessary.
- Serve the soup hot with a dollop of sour cream on top for an extra creamy finish. Enjoy!

What Makes Cabbage Roll Soup So Special?
This soup checks off all the boxes for comfort food: it’s hearty, rich, and packed with flavor. You’ve got tender chunks of cabbage, lean ground beef, perfectly cooked white rice, and a tomato-based broth that’s seasoned to perfection.
The ingredient list is remarkably simple, using staples like beef broth, a head of cabbage, tomato sauce or diced tomatoes if that’s what you have on hand, and a few tasty seasonings to bring it all together.
The real magic happens once everything hits the pot over medium-high heat. As the cabbage softens and the rice absorbs all those deep, savory flavors, you end up with a bowl of pure comfort. It tastes like it’s been simmering all day, but it’s ready in about 30 minutes.
I also like to finish each bowl with a generous dollop of sour cream for a touch of tang and creamy richness—it just takes the whole thing to the next level.

What You Need for Cabbage Roll Soup
This soup doesn’t require any fancy ingredients, just the basics that pack a punch of flavor. Here’s what you’ll need to get started:
- Lean Ground Beef: The base of the soup that brings in a hearty richness and a shot of protein.
- Cabbage: Can’t have cabbage roll soup without it! The cabbage softens beautifully and adds a nice texture to the soup.
- Long Grain Rice: Helps thicken the soup and makes it extra filling.
- Tomato Sauce & Beef Broth: These form the rich, tangy broth that ties everything together.
- Diced Onion & Garlic: Classic aromatics to build flavor from the start.
- Seasonings: Salt, oregano, chili flakes, cinnamon, and soy sauce bring depth, while brown sugar adds a touch of sweetness if you like.
The cinnamon is the wildcard here. A small amount adds this lovely warmth and earthiness that balances out the tangy tomato sauce. Trust me, don’t skip it!

A Few Tips for Making Cabbage Roll Soup
- Rice Choice Matters: For this recipe, long grain rice works perfectly because it holds up well during cooking and doesn’t turn mushy. If you like brown rice or want more fiber, you can use it instead. Just remember to adjust the cooking time a little.
- Cabbage: Any cabbage will work here, but green cabbage is ideal for that soft, melt-in-your-mouth texture. Chop it into bite-sized pieces, so you get a bit of cabbage in every spoonful.
- Make It Your Own: This cabbage roll soup recipe is super adaptable. Want to add some extra veggies? Go ahead!
- Bell peppers or carrots would be great additions. If you like things spicy, you can dial up the chili flakes or add a dash of your favorite hot sauce. If you’re not a fan of beef, ground turkey or pork works well too.
- Fresh herbs like thyme, bay leaves or fresh parsley. Aromatics like tomato paste and smoked paprika are also great additions.

It turned out perfectly! One minor thing.. in the video, he had seasoned it prior to simmering. However, listed here on the website it has steps 6 and 7 backwards; suggesting to season after simmering. It through me off lol but I went with seasoning first, and then simmer like the video. It was a hit!!
Good catch, Andrea! I’ve updated the instructions!
Best version of cabbage roll soup I’ve come across! I was skeptical about the cinnamon, but 1000% this combination of spices is absolutely amazing – it cuts down on the tangy tomato and gives warmth. (Does not taste like cinnamon lol!)
Love hearing that—thank you! Totally get the hesitation with cinnamon, but so glad you trusted it and enjoyed it!
Looks and sounds really really yummy .making it tomorrow!
How did it go, Lee? Thanks for giving it a try!
Can you freeze this Cabbage soup?
Yes, you can absolutely freeze this! Just let it cool completely first, then portion it into airtight containers or freezer bags. It should keep well in the freezer for up to 3 months. When you’re ready to enjoy, thaw in the fridge overnight and reheat on the stovetop.
