There are certain meals I make because they’re impressive, and then there are the ones I make because they make life easier. This cannellini bean salad falls squarely into the second category. It’s one of those Mediterranean salad recipes that somehow feels effortless while still tasting like something you’d happily order at a little café overlooking the sea. I spent a month in Greece last summer, and I came home completely inspired by the way simple ingredients were treated with so much care. Fresh lemon, good extra virgin olive oil, oregano, vegetables, creamy feta, and beans showed up on tables everywhere I went. Nothing was overly complicated, yet every dish felt vibrant and satisfying.This cannellini white bean salad recipe reminds me of those meals.

Cannellini Bean Salad with Lemon & Zucchini

Ingredients:  

  • 2 tbsp extra virgin olive oil, divided
  • 1 zucchini, cut into 1-inch slices
  • 1/4 tsp red chili flakes
  • 2 cloves garlic, thinly sliced
  • 1 can cannellini beans, drained and rinsed
  • 1/4 tsp dried oregano
  • 1 lemon, zested and juiced
  • 1 2-inch square feta
  • pita bread, for serving

Instructions: 

  • Heat 1 teaspoon of the extra virgin olive oil in a large skillet over medium-low heat.
  • Arrange the zucchini slices in a single layer in the skillet, making sure they are not overlapping.
  • Cook until lightly browned on one side, then flip and cook until the second side is caramelized.
  • Transfer the zucchini to a plate and set aside.
  • Add the remaining olive oil to the same skillet along with the sliced garlic and red chili flakes.
  • Cook for about 1 minute, stirring frequently, until the garlic is fragrant but not browned.
  • Stir in the drained and rinsed cannellini beans along with a pinch of salt.
  • Add the dried oregano, lemon zest, and lemon juice.
  • Gently stir everything together and cook for 2–3 minutes, just until the beans are warmed through and have absorbed some of the flavors.
  • Remove the skillet from the heat and gently fold in the cooked zucchini.
  • Transfer the bean mixture to a serving bowl.Break the feta into rustic chunks and scatter it over the top of the salad.
  • Toast the pita bread until warm and lightly crisp, then serve alongside the salad.
  • Serve warm or at room temperature with an extra drizzle of olive oil, if desired.

I almost always use canned beans because they’re convenient and cook beautifully in this recipe.

They’re one of my favorite pantry ingredients for building quick, satisfying meals.

Don’t Skip the Garlic

The sliced garlic gently cooks in the olive oil, softening its sharpness while adding incredible flavor to the beans.

It’s subtle but important.

Feta Cheese Is Meant to Be Rustic

Instead of crumbling the feta into tiny pieces, break it into large chunks.

You get little pockets of creamy, salty goodness throughout the salad instead of having it disappear completely.

Easy Substitutions For This Cannellini Bean Salad

One of the reasons I love cannellini bean recipes is how flexible they are.

Don’t have cannellini beans?

Try Great Northern beans, navy beans, or even chickpeas.

This is one of those cannellini bean recipes I actually look forward to eating the next day.

Because there isn’t any lettuce involved, the salad holds up incredibly well in the fridge.

Store leftovers in an airtight container and they’ll keep beautifully for 3–4 days.

In fact, I think the flavors get even better overnight as the beans continue soaking up the dressing.

Just before serving, I like adding a little extra drizzle of extra virgin olive oil and kosher salt to freshen everything up.

WOW! This is outrageously good! I’ve never been a fan of beans, but since I’m trying to pack more protein into my diet, decided to try this salad. Was not expecting to be such a fan. I doubled the zucchini and added red onion, red pepper. It was awesome the way it was….but took your hint and added a smidge of honey and dijon. That sent it over the top!
