Chipotle Chicken Pasta Salad
Ingredients:
- 300 grams short pasta, cooked al dente, drained, cooled
- 6-8 chicken thighs, cut into small pieces
- 1 tbsp onion powder
- 1 tbsp oregano

- 1/2 tsp salt
- 2 tbsp neutral oil
- 1 can yellow corn, drained and rinsed
- 1 cup green onions, chopped
- 1 cup feta cheese, crumbled
- 1/3 cup cilantro, chopped (optional)
- 1/4 cup chipotle in adobo, blended
- 1/3 cup mayonnaise
- 1/2 cup sour cream
- Juice of one lime
- 1 tbsp yellow mustard
Instructions:
- Preheat the oven to 375°F.
- Toss chicken with onion powder, oregano, chili powder, salt, and oil.
