Ingredients:  

  • 750 mls cottage cheese (approximately 3 cups)
  • 1 package taco seasoning I used old el paso
  • 1 cup cheddar cheese, shredded
  • 1/4 cup water
  • 1/2 lb ground beef, cooked
  • 1/2 cup pickled jalapeños, chopped
  • 1/2 cup cilantro, chopped
  • 1/2 cup cherry tomatos, diced
  • 1/4 cup cheddar, shredded
  • 1/4 cup green onions, sliced
  • 1 pinch salt

Instructions: 

  • Into the bowl of a blender or food processor, blend together cottage cheese, cheddar, taco seasoning, and water. Once smooth pour into large bowl.
  • Add in cooked ground beef, pickled jalapeños, cherry tomatoes, cilantro, green onions, extra cheddar, and salt. Stir and adjust seasoning if needed! Enjoy with nacho chips!

DELICIOUS!!! Easy!!! and just tastes better if you leave it in the fridge for a few hours (although it doesn’t last that long). I did play around with the additions depending on what I have in the house. Fresh garden chives go really well. Black beans also are a nice addition.
