I love a salad that feels like it should not work, but absolutely does. This cucumber avocado salad is one of those recipes. It is simple, colorful, juicy, creamy, a little sweet, a little tangy, and has just enough spice from Tajin to make every bite feel like something you would eat on vacation in Mexico.

- Add the diced cantaloupe, cubed avocado, and sliced Persian cucumbers to a large bowl.
- Zest the lime directly over the salad.In a small bowl, whisk together the lime juice, honey, and Tajin until combined.
- Drizzle the dressing over the salad.
- Gently toss until everything is lightly coated, being careful not to mash the avocado.
- Add the fresh cilantro and gently toss once more.
- Serve immediately.

Persian cucumbers are great here because they are crisp, sweet, and do not need to be peeled. If you only have English cucumbers, they will work too. I would avoid cucumbers with thick, waxy skin unless you plan to peel them first.
The lime juice is essential. Lemon can work in a pinch, but lime makes the salad taste brighter and more vacation-like.
