  • 2 cucumbers, ribboned

  • 1 avocado, diced
  • 1/2 cup pistachios
  • 2/3 cup chopped parsley
  • 1/2 cup crumbled feta cheese
  • 1 tbsp olive oil
  • salt and pepper
  • Juice of ½ lemon

Instructions: 

  • Using a mandolin or vegetable peeler, slice or ribbon the cucumbers and add to a large bowl.
  • Add pomegranate seeds, red onion, avocado, pistachios, parsley, and feta.
  • Drizzle with olive oil and lemon juice.
  • Season with salt and black pepper.
  • Toss gently to combine, being careful not to mash the avocado.
  • Taste and adjust seasoning as needed.

I am from NS and live in Alberta. I am enjoying your new tv show and I like to get your email recipies. One thing I am having a BIG problem with is “mystery recipies”. 99% of the time if there isn’t a titile to the recipe and it is hidden I am likely to delete the email completely and not bother looking at any of the post. Please stop hiding things and just say what it is. I like to save these in a folder but with no content on the post, retrieving it at a later date is impossible and wastes too much time. Please change the way you do this as I really want to continue to follow you.
