Starbucks Egg Bites Recipe
Ingredients:
- 1 litre liquid egg whites
- 1½ cups white cheddar cheese or mozzarella
- 500 grams full fat cottage cheese
- 1 tsp salt
- 1 tsp black pepper
FILLING
- 1 cup red pepper, chopped
- ½ cup sliced green onions
- 1/2 cup mozzarella cheese
Instructions:
- Preheat the oven to 300 and place a brownie tray with water into the oven. This will create a more humid environment. Spray a silicone muffin tin with cooking spray.
- In a blender, blend the cottage cheese, salt, pepper, and mozzarella together. Give the bowl a little shake to force the cheese combo to the bottom of the blender. Now add in the liquid egg whites and blend on low for 20-30 seconds. You do not want to incorporate very much air into the mixture. Once you are done, skim the foam off the top of the mixture if there is any.
- Pour the egg mixture into the muffin cups, filling the cups 3/4 of the way.
- Season with red peppers, green onion, and some mozzarella.
- Place the muffin tin in the oven for about an hour. You want them to be totally set. If the centre is still jiggly, let bake for another minute or so and check again.
- Remove them from the oven and let the egg bites sit in muffin tray for around 5-10 minutes. Gently remove from tins and let them cool on cooling rack.
- These stay in the fridge for 7 days or can be frozen. If frozen, wrap in a paper towel and microwave for 30 seconds to 1 minutes depending on your microwave.

What if you don’t have a silicone muffin pan? Can you use paper liners in a metal pan?
You might be able to use a metal pan that has been sprayed very well but they still might stick. Let me nknow if you give it a go!

My family love the Dutch Baby recipe but it isn’t a daily breakfast. These healthy eggbites are delicious. Easy to make ahead and keep in the fridge or freezer for warming up in the morning. Tip: uses a regular size muffin tin not a mini muffin tin. Learned that the hard way. Make them once and you’ll get asked for them again and again.

My first batch must have had too much air because they deflated to half the size. And only took 35 minutes to cook. I ended up getting 35 total. The second batch sat for 30 minutes in the fridge and that did the trick. Fluffier but still only took 40ish minutes. Not sure why these take an hour but the other recipe is 30-35mins? I added spinach instead of onion and they taste great!
