The dressing is where so much of the flavour and texture comes from. We use equal parts greek yogurt and mayonnaise in this dressing, so it has plenty of tang but also creaminess. We used a generic red hot sauce with a little bit of heat but lots of great smoky flavour. But if you have a favourite hot sauce that knocks you off your feet every time, by all means kick it up a notch!

Mexican Summer Corn Salad
Ingredients:
- 4 large Ears of Corn Grilled
- 1 large Red Pepper Diced
- 1/4 cup Jalapeno Chopped
- 1/4 cup Cortina or Feta cheese
- 1 large Avocado Diced
- 1/4 cup Fresh Cilantro
- 1 large Lime Juiced
For the Dressing
- 3 tbs Greek yogurt
- 3 tbs Mayonnaise
- 1 large Garlic clove Minced or grated
- 1 large lime Zested and juiced
- 1 tsp Hot Sauce
- Salt to taste
Instructions:
- Heat your grill to 350F-400F. Grill 4 ears of corn decently charred. Once cooked, cut the corn off the cob and place in a bowl.
- Into the bowl add red pepper, onion, jalapeño, feta cheese, avocado, cilantro, and the juice on one lime.
- In a smaller bowl mix together Greek yogurt, mayo, garlic, lime juice and zest, hot sauce, and salt.
- Pour dressing over your mixed salad. Garnish with more crumbled cheese, and a handful of fresh cilantro.
