  • 1 cup cottage cheese
  • 1 cup mozzarella cheese, shredded
  • 3 large eggs
  • 1 1/2 tsp salt
  • 1 cup corn starch or tapioca starch

  • 1/2 cup pepperoni (or any desired toppings)
  • 1/2 cup mozzarella cheese, shredded

Amazing! Whole family loved them and were fighting over the leftover. We did a cheese blend of mozzarella and cheddar and it still came out delicious. Did need less time than as listed in my over, but still turned out wonderful. Will definitely make these again.

These are delicious however, 35 minutes was way too long in my oven. They taste good enough, though I will make them again. Check your muffins after 25 minutes
