I absolutely love finding ways to use leftovers that feel completely different from the original meal. There are certain meals I make almost every single time we fire up the BBQ, and this beef steak salad recipe is one of them.

It usually starts the same way. Everyone fills their plates with grilled steak, charred vegetables, and whatever sides happen to be on the table. Then the next day, I open the fridge and spot a few slices of steak, some grilled asparagus, maybe half a zucchini, and a container of leftover rice.

Most people see leftovers.

I see tomorrow’s lunch.

And sometimes I think this steak salad recipe is even better than the original meal.

The smoky steak, the charred vegetables, the fresh basil, and the shaved pecorino all come together beautifully, but the thing that really makes this salad special is the orange honey dressing. It’s bright, fresh, a little sweet, a little tangy, and completely transforms everything it touches.

The first time I made this recipe, it was simply a way to use up leftovers. Now I find myself grilling extra steak just so I can make it the next day.

That’s usually a pretty good sign.

Why This Steak Salad Recipe Works

A lot of beef steak salad recipes focus entirely on the steak. And while tender sliced steak is obviously important, I think the ingredients around it deserve just as much attention.

This salad combines:

  • Tender sliced steak
  • Charred asparagus
  • Grilled zucchini
  • Fluffy rice
  • Fresh basil
  • Shaved pecorino or parmesan
  • A bright orange honey dressing

The result is a hearty salad that feels substantial enough for dinner while still feeling fresh and light enough for summer.

What I love most about this steak salad recipe is that it doesn’t feel like a salad you’re eating because you “should.” It feels like a meal you actually want.

The steak brings protein and richness. The grilled vegetables add smoky flavor. The basil keeps everything tasting fresh. Then the dressing comes in and wakes everything up with bright citrus flavor.

Every ingredient earns its place in the bowl.

Notes On This Steak Salad Recipe

This beef steak salad recipe usually starts with leftovers in my house.

Maybe it’s a boneless ribeye steak from the night before. Maybe there are a few grilled veggies hanging around. Or maybe there’s some rice sitting in the fridge waiting to be used.

As long as the steak was seasoned well with kosher salt and black pepper, you’re already halfway there.

Every summer, there’s a point where I intentionally throw an extra steak on the grill knowing full well this salad is happening the next day.

Future me is always grateful.

Instead of reheating everything and calling it dinner again, I toss it into a large platter, drizzle it with that orange dressing, and suddenly it feels like a completely different meal.

That’s my favorite kind of cooking. Not fussy. Not complicated. Just taking good ingredients and turning them into something new and delicious.

And if you’re cooking steak specifically for this recipe? Make extra. Trust me.

Ingredient Tips That Make a Difference In This Steak Salad Recipe

Let The Steak Rest

If you’re cooking steak specifically for this recipe, let the steak rest before slicing.

I know it’s tempting to cut right in, but letting the steak rest for a few minutes makes a huge difference. The juices stay where they belong, which means every slice stays tender and flavorful instead of ending up on the cutting board.

Use Charred Vegetables

The grill adds so much flavor here.

Grilled asparagus and zucchini bring smoky notes that pair beautifully with the citrus dressing. Those little charred edges make all the difference.

Room Temperature Rice Works Best

Cold rice straight from the fridge can clump together.

Let it sit out for a few minutes before assembling the salad. Room temperature rice mixes much more easily and absorbs the dressing better.

Fresh Herbs Matter

Fresh basil gives this steak salad recipe a bright finish that dried herbs simply can’t replicate.

Don’t skip it.

Slice Against The Grain

Always slice steak against the grain for the most tender bite possible.

It’s a small detail that makes a big difference.

The Dressing Makes The Difference

I’ve made plenty of beef steak salad recipes over the years, but this dressing is one I come back to over and over again.

The combination of:

  • Orange juice
  • Orange zest
  • Olive oil
  • Honey
  • Dijon mustard
  • Red wine vinegar

creates something that feels bright, fresh, and summery without overpowering the steak.

The sweetness from the orange balances the smoky beef perfectly while the acidity keeps the entire salad tasting fresh.

It’s one of those dressings that people always ask about.

Best of all, it comes together in a small bowl in about 30 seconds.

No blender.

No food processor.

And no special equipment.

Just whisk, drizzle, toss, and eat.

Make This Steak Salad Recipe Your Own

One of the reasons I love steak salad recipes is how adaptable they are.

Swap The Greens

Baby spinach works beautifully, but you could also use:

  • Peppery arugula
  • Romaine
  • Mixed lettuce
  • Radicchio

Each brings its own personality and flavor.

Change The Cheese

Not a pecorino fan?

Try:

  • Feta
  • Goat cheese
  • Blue cheese
  • Parmesan

Each creates a completely different version of the salad.

Add More Vegetables

This salad works beautifully with:

  • Cherry tomatoes
  • Cucumbers
  • Red onions
  • Radishes
  • Creamy avocados

It’s a great clean-out-the-fridge recipe.

Swap The Acid

Instead of red wine vinegar, try:

  • Balsamic vinegar
  • Apple cider vinegar
  • Fresh lemon juice

All work wonderfully with the orange dressing base.

A Steak Salad Recipe That Is Meal Prep Friendly

This steak salad recipe is fantastic for meal prep.

Store the dressing separately and keep everything else in the fridge.

When you’re ready to eat, drizzle the dressing over top and toss.

That’s it.

This is the kind of lunch that makes coworkers drool.

Not a bad way to spend a lunch break.

If you’re craving something with a completely different vibe, BBQ chicken salad is another fantastic option. This version looks amazing!
