  • 2 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp oregano or Italian seasoning
  • 3 pinches salt

For the Dressing

  • 2-3 garlic cloves, minced
  • 1 tbsp chopped capers
  • 2 tbsp lemon juice
  • 3 tsp dijon
  • 3 tsp Worcestershire sauce
  • 1 tsp chili crisp
  • 1 tsp fish sauce
  • 1/3 cup olive oil
  • 1/4 cup parmesan

Instructions: 

  • Heat a skillet over medium heat and cook pancetta until crisp. Remove and set aside on a paper towel–lined plate.
  • In the same pan, melt the butter. Add panko, garlic powder, oregano, and salt. Stir and cook until golden and fragrant. Transfer to a bowl to cool.
  • In a small bowl, whisk together garlic, capers, lemon juice, dijon, worcestershire, chili crisp, and fish sauce. Slowly stream in olive oil while whisking until emulsified, then stir in parmesan.
  • Place kale in a large bowl. Pour dressing over top, toss well, and massage with your hands for 1–2 minutes until the leaves darken and soften slightly.
  • Spread kale on a serving platter or leave it in the bowl. Top generously with parmesan, crispy pancetta, and toasted breadcrumbs. Serve immediately.
