I am normally not a fan of cottage cheese, but wanted to try these muffins to incorporate a healthier muffin option. I did swap half the oil with applesauce (for a lower fat content)and it worked perfectly. These are tender and fluffy delicious muffins! I am a convert to cooking with cottage cheese! Hi Andy, Just made these using 1 cup cornmeal/2 cups flour and and combination melted butter with olive oil – used baking powder instead of soda and omitted cinnamon to get more of a cornbread flavour – lined muffin tins with butter to get a crispy outer texture – only took 20 min and the results were amazing!!!
