Why You’ll Love This Chickpea Salad Recipe
Let’s talk flavour. This is not your average “healthy salad.”
We’re talking about something next level. The inspiration behind this chickpea salad is Moroccan cuisine. Warm spices and sweet-savory combos make every bite feel like a flavour explosion.
You have the earthiness of cumin and cinnamon. Brightness from the lemon juice and red wine vinegar. The sweetness comes from honey and dried cranberries. Finally, you get a fresh hit from the mint and cilantro.
And of course, 1 tsp olive oil to round everything out and bring it all together. This is a salad with depth, character, and some serious flair. Naturally gluten free and seriously delicious.

The Perfect Chickpea Salad
One of the biggest things that makes this Moroccan chickpea salad stand out is the texture. Every spoonful has something exciting going on. The chickpeas bring a creamy bite, while the diced red peppers and apples add the crunch. The red onion gives it a subtle zing, and those dried cranberries sneak in that sweet chew that balances everything beautifully.
It’s the kind of salad that makes you go back for seconds (and thirds), and honestly, I’m not judging — I do the same.

Chickpeas – The Heart of the Salad
The base of this salad is, of course, chickpeas. You can absolutely cook them from scratch if that’s your jam, but I usually keep it simple and reach for canned chickpeas. I always have a couple cans kicking around the pantry, so it’s a no-brainer when I’m craving this dish.
Chickpeas not only taste great, but they also pack a lot of plant-based protein, making this a seriously nutritious option. It’s one of those chickpea salad recipes that’s just as good for you as it is satisfying.

Let’s Break Down the Dressing
This dressing is the kind of thing you’ll want to drizzle over everything. It’s all about balance.
Use bright lemon juice and tangy red wine vinegar. Add a touch of sweetness with honey. Warm spices like cumin, cinnamon, and curry powder add extra flavor. Add in some chopped fresh mint and cilantro, and hit it with olive oil to bring it all together.
It coats every little bit of the salad, making every bite pop with flavour. Honestly, I could eat it by the spoonful.

Ideal for Meal Prep & Potlucks
One of my favourite things about this chickpea salad is how well it holds up. I’ll often make a big batch on Sunday and enjoy it throughout the week — the flavours actually deepen and get better after a day in the fridge. It’s a total meal prep win.
Heading to a potluck? Bring this salad. It travels well, holds up without getting soggy, and it’s different enough to stand out among the usual suspects. Trust me — this is the dish people remember.

Quick Prep Time, Big Flavour
We all love a recipe that delivers max flavour with minimal effort, and this one totally fits the bill. The prep time is quick — especially if you’re using canned chickpeas — and everything comes together in one big bowl. It’s fast, easy, and you’ll be enjoying forkfuls of spicy-sweet goodness in no time.

Make It Your Own
This Moroccan chickpea salad is super versatile. Don’t have red onion? Swap in green onion or shallots. Want more crunch? Toss in some toasted almonds or pumpkin seeds.
Not a fan of mint? Try other fresh herbs like basil or flat-leaf parsley. This salad’s flexible and forgiving, which makes it perfect for riffing on with whatever you have on hand.

Just made this today. Love the bit of heat, spice, crunch, tang. I didn’t have red wine vinegar, I used rice wine. I’m not a fan of cilantro so I used oregano. My only problem is I couldn’t decide if I should use a fork or a spoon. In the end I chose a spoon so I could spoon up the delicious flavors of the sauce. 🙂
Great choice re: the spoon! Your swaps sound great!
Delicious! This is a quick, healthy and flavorful recipe. The only thing I change is adding more apple as I like the sweet crunch!
This taste great AND is a healthy addition.
Thanks, Donna! Nothing wrong with adding more apples. Appreciate the kind words!
This is an amazing bean salad! It’s definitely going to be a part of my weekly meal prep.
Love it, Elizabeth! It’s a great one to have in the fridge for lunches all week long.
Saw this. Made this. LOVED this salad! It’s a keeper.
so happy you enjoyed this, Brooke!
Loved it Andy, thanks for that! It didn’t say what size tin of chickpeas, so I hedged my bets and went with 2-540ml cans. I figured you may have used 398ml cans, so that would be close. Turned out great, thanks again!
You got it right, Gary! Those are the standard size and that’s what I used as well. So glad you liked this one!
