- In a bowl, use a hand or stand mixer to beat together the cream cheese, sugar, vanilla, lime juice, and lime zest until smooth. In a separate bowl, whip the heavy cream until it forms soft peaks. Gently fold the whipped cream into the cream cheese mixture until fully combined and fluffy.
- Pour cream cheese mixture over chilled graham cracker crust and place pan bake into the fridge, ideally over night or for at least 5 hours.
- Remove and garnish with whip cream and lime wedges! Enjoy!

Does the type of lime make a difference in flavor? Key limes as opposed to regular limes?
Hi Cherie, I used regular limes in this recipe but generally speaking, key limes are smaller, more aromatic, and have a slightly sweeter, more floral flavor than regular limes, which are more tart and bold.
I just gave this recipe a try, can’t wait to taste it tomorrow, but the bit of the topping I tried left on the spoon after was amazing

This is the first recipe from Andy’s that I had any problem with. I followed the instructions as written and it was a disaster. Had I read the preamble it probably would have been fine, but I hadn’t. The instructions (Step 2) is where the problem is. It indicates that after the cream cheese, sugar, vanilla,lime juice and zest mixed smoothly, add the heavy cream and whip for 5 minutes or until thick. It should have said to whip the cream first, THEN add it to the cream cheese mixture! The final result was a runny cheesecake. The taste was good though. At least if I make it again, I’ll know what to do
Hi Dave, if the cream didn’t thicken, it’s possible it wasn’t cold enough, or that the cream cheese was too soft. That can make it tricky to get the right texture!
This recipe has two different ways for the cream, please verify if we whip the cream first and fold in OR do we pour in the cream and whip till thickened. Please clarify, thank you.
