If there’s one thing I hear over and over from folks in my community, it’s this: “Andy, that chickpea burger recipe you posted? It’s a game-changer.” And, I have to agree. This bean burger recipe has everything I want in a hearty and delicious veggie style burger. It has great flavor, a nice crunch, good protein, and is easy to make.

For a tasty lunch, a healthy dinner, or something quick, this is a great choice. We’re talking about easy chickpea burgers that deliver every single time.

Chickpea Burger

Ingredients:  

For the Burgers

  • 1 540 ml can chickpeas drained and rinsed
  • 1 cup cottage cheese
  • 2 cloves garlic minced
  • ½ cup green onions sliced
  • 1 tbsp tahini
  • 1/4 cup feta cheese crumbled
  • 1 lemon zested
  • 1 egg
  • 1/4 cup rice flour
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp kosher salt
  • 2 tbsp olive oil

Burger Sauce

  • 1 dill pickle diced
  • 10 capers
  • ½ tsp dijon mustard
  • 2 tbsp mayo
  • ½ tsp lemon juice
  • 1 pinch kosher salt and pepper
  • 2 tbs Greek yogurt

Add ons

  • sliced tomatoes
  • arugula

Instructions: 

  • Into the bowl of a food processor, add 1 can of drained and rinsed chickpeas. Blitz until crumbly (about 8-10 pulses).
  • Add your chick peas to a large mixing bowl along with cottage cheese, garlic cloves, green opinions, tahini, crumbled feta, the zest of 1 lemon, rice flour, salt, pepper, cumin, garlic powder and an egg.
  • With a wooden spoon, mix well until all ingredients are fully combined.
  • Place in the fridge to set up for about 15 min.
  • Into a bowl add 1 diced dill pickle, capers, Dijon, Greek yogurt, mayo and lemon juice. Mix well and set aside.
  • Form your patties and place on individual squares of parchment paper. This helps them keep their shape.
  • Place a frying pan over medium heat and add in about 2 tbsp of olive oil. Once heated, gently lay your patties and fry until golden brown, about 4-5 min on each side. Remove your patties from the pan. Toast your buns, slice your tomato, top with fresh greens and enjoy!

So, what’s the secret sauce behind these patties? Let’s break it down.

Chickpeas: A Protein Powerhouse

Let’s start with the obvious: chickpeas. These humble legumes are the base of the burger, and they’re doing double duty—adding structure and boosting your protein count. A cup of chickpeas packs in about 39 g of protein—not too shabby, right? That’s why they’re one of my favourite ingredients to cook with.

Chickpeas are full of fiber, minerals, and antioxidants. This makes them a smart and satisfying choice for this chickpea burger recipe— hearty but not too heavy.

Chickpea Burger with Egg: Extra Hold, Extra Protein

One of the common complaints about a bean burger recipe? It falls apart.

No thanks. That’s why I add an egg—for structure and a little more protein. A single egg gives us around 6 grams of protein, and it binds everything together so your burger patties don’t crumble mid-flip.

This combo of egg, chickpeas, and cottage cheese (yes, we’re going there) gives these patties the right hold and richness and adds a great amount of protein.

Creamy Protein Boost with Cottage Cheese

Now here’s the slightly unexpected player: cottage cheese. A cup of cottage cheese has about 23g of protein.

It adds a creamy, salty taste to the patties that balances the nuttiness of the chickpeas. These burgers stay juicy inside and crispy outside. And that’s a must for any good veggie burger recipe.

Chickpea Burger: Seasoning for Big Flavour

For seasoning, I like to use warm, earthy spices. Think cumin, garlic powder, a little salt, and pepper. Add a splash of lemon juice to brighten things up. Don’t underestimate that little bit of lemon—it cuts through the richness and wakes the whole thing up.

Want to riff on the flavour? You could easily sub in smoked paprika, chili powder, add a handful of fresh parsley, or mix in grated onion for an extra hit of savoury. Just don’t skip the chickpeas, egg, or cottage cheese—those are the core building blocks.

Texture Tip For Your Chickpea Burger: Pulse, Don’t Paste

One of the best things about these easy chickpea burgers is their texture—but only if you nail the pulsing. I drain and rinse a can of chickpeas, toss them into a food processor, and pulse 9-10 times. That’s it. You want them chopped and crumbly, not blended into hummus.

That crumbly texture gives this bean burger recipe its signature bite—none of that mushy middle stuff.

Crisp ‘Em Up With Rice Flour

To get that golden crust, I toss in a little rice flour. It helps the outside crisp up beautifully without weighing the patties down. You can swap in all-purpose, almond, or oat flour if that’s what you’ve got—but I love rice flour for that light crunch.

These chickpea burgers are naturally gluten free, so using rice flour keeps things friendly without compromising texture. Just make sure to use certified gluten-free oats or alternative flours if you’re making swaps!

Tips to Nail the Cook

Once the patties are formed, toss them into the fridge for 10-15 minutes to firm up. It’s a simple move that makes a huge difference—they hold their shape better, fry up evenly, and don’t fall apart in the pan.

And when it comes time to serve? Pile on your favourite toppings. I love sliced tomato, arugula maybe a simple slaw or a little avocado.

Don’t forget the burger sauce! You can stick with classic mayo, mustard, ketchup, lettuce and tomato. Or, you can try a homemade tahini or yogurt drizzle for something extra special.

Bonus: Make a double batch, form the patties, and freeze them raw. When you’re ready to eat, just pull and fry straight from frozen. Dinner in 10 minutes? Yes, please.

Substitution Ideas

  • No egg? Try a flax egg (1 tbsp flaxseed + 2.5 tbsp water).
  • No cottage cheese? Ricotta or even Greek yogurt can sub in.
  • No rice flour? Oat flour or breadcrumbs work just fine.

Make It a Meal

Serve with a side of roasted sweet potato wedges, a fresh salad, or even on top of a grain bowl for a different twist. These burgers play well with so many sides—and hey, they also make a killer lunchbox addition.

Love the flavour of these chickpea burgers and they were easy to make. Like Tom commented, mine would not stay together. I will try Andy’s suggestion of extra flour and draining the cottage cheese when I make these again. They were great in lettuce wraps too.
