Key Ingredients for This Hearty Lasagna Soup

This Lasagna Soup recipe loads delicious, flavorful ingredients that will surely make it a weekly staple. Here’s a breakdown of some of the most important components:

  • Lasagna Noodles: You can’t have lasagna without them! Cooking the noodles in the soup helps them absorb the rich flavors. This makes every bite more delicious and keeps your kitchen clean.
  • Ground beef gives a classic and comforting taste. You can also use ground turkey, sausage, or plant-based protein if you prefer.
  • Good Stock: Whether you use chicken stock or beef broth, a flavorful stock is key to giving the soup depth and richness. Using water would dilute the flavors, so opt for a good-quality stock for that bold, hearty base.
  • Tomato Paste: Don’t confuse this with tomato sauce—tomato paste is the ultimate concentrated tomato flavor. Cooking it down mellows the acidity and brings out a rich, deep taste that complements the soup.
  • Diced Tomatoes: Canned or diced cherry tomatoes add a burst of freshness, balancing out the richness of the broth.

Tips for Nailing This Easy Lasagna Soup Recipe Every Time

This is an easy Lasagna Soup recipe, but there are a few tricks to ensure it turns out perfectly every time.

  • Cook Your Noodles Just Right: Everyone has their own favorite way to cook pasta. Some like their noodles firm, while others want them soft.
  • The key here is to keep an eye on them as they cook directly in the soup. Remember, they will keep cooking in the hot broth after you turn off the heat. Check them often to get the doneness you want.
  • Brown Is Best: Don’t rush the step of browning your meat. Whether you use ground beef, sausage, or another protein, browning it on medium-high heat adds great flavor to the soup base. Those little brown bits that stick to the bottom of the pot? Pure gold!
  • Season As You Go: This soup is full of opportunities to layer in flavor. Season the meat, season the broth, and season the noodles. A little garlic powder, red pepper flakes, and fresh thyme can go a long way in bringing out the best in this dish.

How to Make This Easy Lasagna Soup Recipe

Here’s a step-by-step guide to making your own Lasagna Soup at home. It comes together in just about 30 minutes, making it perfect for busy weeknights or weekend meal prep.

  1. Brown the Beef: In a large pot or Dutch oven, heat some olive oil over medium-high heat. Add ground beef and cook it until it browns, breaking it up with a spoon. Don’t forget to season with salt and pepper. Once browned, remove the beef from the pot and set it aside.
  2. Cook the Vegetables: In the same pot, add some olive oil. Sauté the yellow onion and garlic until they are soft and smell good. This should take about 5 minutes.
  3. Add Tomato Paste and Broth: Stir in the tomato paste and cook for a couple of minutes to deepen its flavor. Add store bought chicken broth, diced tomatoes, and seasonings like garlic powder, red pepper flakes, and fresh thyme. Bring to a boil, then reduce the heat to a simmer.
  4. Add the Noodles: Break up lasagna noodles into smaller pieces and add them to the pot. Let them cook directly in the soup, stirring occasionally, until they reach your preferred texture—al dente or softer, your call!
  5. Return the beef and serve: Once the noodles finish cooking, add the browned beef back into the soup. Give everything a good stir and adjust the seasoning if needed. Serve with a dollop of ricotta, a sprinkle of mozzarella, or Parmesan for that true lasagna experience!

Meal Prep and Freezing

This hearty Lasagna Soup is perfect for meal prep. Make a large quantity, let it cool on the counter, and then store it in an airtight container in the fridge for up to 4 days.

It also freezes beautifully! To freeze, feel free to let the soup cool completely, portion it out into freezer-safe containers, and freeze for up to 3 months. When you’re ready to eat, thaw in the fridge overnight and reheat on the stovetop.

Variations and Customizations

  • Vegetarian Lasagna Soup: Use plant-based options instead of meat. You can also add more vegetables, lemon juice, like spinach or zucchini, for extra flavor.
  • Creamy Lasagna Soup: Stir in a splash of cream or a spoonful of ricotta at the end for a creamy twist.
  • Broccoli and Cheddar Soup Fusion**: Feeling adventurous? Add a bit of broccoli and shredded cheddar cheese for a fun mix of flavors!

This recipe has been added to our meal rotation! We LOVE it. Such great flavour.
The only tweak I personally made was using the Garofalo little lasagna noodles instead of breaking up traditional noodles.
