One of my favourite orders at Starbucks is their lemon loaf. I mean, let’s call a spade a spade, it’s delicious. Moist, lemony, and sweet. While it is a lovely little treat everynow and again, likely not something that is going to fuel you day in and day out. That’s where this Starbucks Protein Lemon Loaf comes in. Same level of deliciousness, but a fraction of the sugar and calories. Perfect to whip up on a Sunday to have as a sweet treat throughout the week!

How to make Starbucks lemon loaf?

Making this Starbucks Protein lemon loaf is really simple! Really all you need to do is in one bowl mix together all of the dry ingredients such as flour, vanilla protein powder (I like the QUARTTO Brand), baking soda, baking powder, zero calorie sweetener , and salt. In a second bowl, mix together the wet ingredients such as greek yogurt, eggs, melted butter, melted coconut milk, lemon zest, lemon juice, and vanilla. Now you guessed it, combine the wet and dry together ingredients together and pour into a loaf pan. From there toss in the oven for about an hour and you are good to go!

Tips for Nailing this Starbucks Protein Lemon loaf

If you really want to nail this recipe I highly suggest following the few tips below to ensure a great result.

  1. Whisk your dry ingredients before mixing in the wet ingredients. This ensures even distribution of the ingredients and will result in an airier loaf!
  2. Check the loaf with a wooden skewer before removing from the oven. This loaf needs to bake for close to an hour. Make sure to poke the centre with a wooden skewer and only remove when the skewer comes out totally clean.
  3. Allow the loaf to fully cool before cutting. This helps ensure more moisture stays in the loaf. In saying this, good luck waiting for it to cool without taking a bite. I never do!

How many calories are in Starbucks Lemon Loaf?

While we can’t deny that the Starbucks lemon loaf is tasty, it is definitely loaded with sugar and fats. Each slice of Starbucks lemon loaf is around 450 calories with only 6 grams of protein. While this is totally fine and fun to eat from time to time, my Starbucks Protein Lemon Loaf is 280 calories with 23g of protein per slice, which I feel is a much better everyday kind of option!

What can I use instead of protein powder in baking recipes?

While I am a big fan of using protein powders in my baking, I understand it’s not for everyone. I get this question a lot and I have found that the best substitute for protein powder when backing is skim milk powder.

Starbucks Protein Lemon Loaf

Ingredients:  

Lemon Loaf

  • 1 1/2 cup flour
  • 3/4 cup vanilla protein powder 90g or three scoops
  • 3/4 cup sweetener I use monk fruit
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup greek yogurt
  • 3 eggs
  • 2 tbs lemon zest 2 lemons
  • 1 1/2 tbs lemon juice
  • 1 tsp vanilla extract lemon extract if you going for it!!
  • 1/4 cup melted butter
  • 2 tbs melted coconut oil

Lemon Icing

  • 1 cup powdered sugar
  • 1/4 cup vanilla protein powder
  • 2 1/2 tbsp milk
  • 1 tbsp lemon juice

Instructions: 

  • Preheat oven to 350f and prepare a loaf pan with parchment paper and cooking spray.
  • In a large bowl whisk together flour, protein powder, sweetener, baking soda, baking powder, and salt.
  • In a second bowl mix together greek yogurt, eggs, lemon zest, lemon juice, vanilla, melted butter, and melted coconut oil. Now pour wet ingredients into dry and fold together. Be sure to not over mix.
  • Pour batter into loaf pan and place in the oven for 45-55 minutes. Be sure to check centre of the loaf with a wooden skewer. You want it to come out clean! That means it's done!
  • Allow the loaf to cool on a rack and this is the perfect time to whip up the icing. In a bowl mix together powdered sugar, protein powder, milk, and lemon juice. Drizzle the icing over the loaf, pour a cup of tea and enjoy!

Seriously, so good! I didn’t use the lemon zest, but i did use lemon extract instead of vanilla. I also used powdered milk in place of the protein powder, and coconut sugar instead of monk fruit. I didn’t feel the need to ice it as it was fantastic just as is!

I am wondering how this would come out with almond flour (keto)…

Hi Marlon, You can give this a try with almond flour, but it will likely be moister. I’d suggest starting with about 2 cups of almond flour in place of the regular flour and keeping an eye on bake time, as it may need a little longer.
